Mini Pizza
This is nice and easy. My kids love these. I buy a packet of pastry sheets. Cut into shapes. I make squares. Prick pastry with fork. Paste with beaten egg. Top with tomato sauce, cheese and ham or bacon. Or any other ingredients you want to add. They only take about 10 minutes to cook at 180 degrees. They are nice reheated or for school lunches.
Mini Quiche
These are great for shared lunches and baby showers. They freeze well.
Mix all of these ingredients together and bake at 180 degrees for about half an hour.
1 can creamed corn, 3/4 cup of milk, chopped onion, chopped bacon, 1/2 cup of cheese, 4-6 eggs, 1 cup flour, 1 teaspoon of baking powder, salt and pepper. Bake in mini muffin pans. If you don't have these you can use large muffin pans. Sometimes if I have left overs I bake in a dish. It will make atleast 24 mini muffins.
Corn Savouries
¼ cup freshly chopped bacon
1 tsp butter
¼ cup finely chopped parsley
1 tin creamed corn
¼ cup chopped celery
1 small diced onion
¼ tsp salt
pepper
Cook bacon in the butter until it is crisp. Add onion and cook until tender. Add corn, celery, salt and pepper and lastly parsley. Heat through and put into bread cases or cream puff cases, pastry etc.
