COCONUT LOAF

2 cups coconut
2 cups flour
1 cup sugar
1 ½ cups milk
2 tsp baking powder

Bake for 1-1 ½ hours at 180

CHOCOLATE CHIP COOKIES

125g butter                 ½ cup white sugar                  ½ cup brown sugar
1 egg                           1 ¾ cup flour                            1 ¾ cup baking powder
125 g choc chips       60g walnuts                             vanilla

Cream together butter, vanilla, and sugars.  Beat in egg.  Add flour, baking powder and salt.  Add choc chips and walnuts.  Shape into balls and squash with fork.  Bake 180 degrees for 10-12 mins

MICROWAVE CHOCOLATE CAKE

Melt 50g butter and 1 Tbsp golden syrup.  Beat 1 egg and ½ cup sugar and 1 tsp vanilla.  Add to butter mix:-

1 cup flour, 1 tsp baking powder, 1 Tbsp cocoa, ¾ cup milk ½ tsp baking soda.

Cook on high for 6 mins.  Let stand for 5 mins then tip out.

BRAN MUFFINS

1 egg                            ½ cup sugar                            1 tsp baking soda
2 cups bran                 1 tsp baking powder              2 Tbsp butter
1 cup flour                    2 dessert spoons syrup       1 cup milk

Beat eggs and sugar.  Add melted butter and syrup.  Then add dry ingredients, milk and baking soda.  Bake 200 degrees for 15 mins.  You can add raisins, nuts or apricots.

LEMON MUFFINS

2 cups self raising flours
¾ cup sugar
75grams butter
1 cup milk
1 egg

Grated lemon rind or 2 small lemons
¼ cup lemon juice
¼ cup sugar

Measure the flour and sugar into a bowl and toss to mix.
Melt the butter, add the milk, egg and lemon rind and beat well with a fork to combine. Add the liquids to the dry ingredients and combine only until the dry ingredients have been lightly dampened but not thoroughly mixed.
Divide the mixture evenly between 12 medium sized muffin pans that have been well coated with chef mate non stick spray.  Bake 200c for 10 mins.Stir together lemon juice and the sugar.  Drizzle over the top of the muffins as soon as they are removed from the oven. 

DOUBLE CHOCOLATE MUFFINS

1 ¾ cup flour
1 tsp baking soda
1 cup sugar
¼ cup cocoa
100grams butter
1 egg
1 cup yoghurt
½ cup milk
½ tsp vanilla
¼ - ½ cup choc chips

Sift the dry ingredients into large mixing bowl.  Melt the butter, add the remaining ingredients and mix until smooth.  Add the combined liquids to the dry ingredients and fold together until the flour is dampened, but not smooth.

Divide between 12 medium sized muffin pans that have been well coated with chef mate non stick spray.  Sprinkle with chocolate chips if desired before baking.  Bake at 200C for 10-12 mins.

BROWNIE

125G butter
1/4 cup cocoa
1 cup sugar
1/4 tsp salt (I never bother with salt)
1 tsp vanilla
1 cup plain flour
1 tsp baking powder
1/2 cup chopped walnuts (optional) 

Heat oven to 180C.  Melt butter until liquid.  Take off hear and stir in the cocoa, then sugar, eggs, salt and the flour and baking powder.  Add nuts if you like.  Put into a greased tray or use baking paper.  When cool sprinkle with icing sugar.  Can be frozen.

 

THE BEST BIRTHDAY CHOCOLATE CAKE EVER

2 cups flour 2 cups sugar
1/2 cup cocoa 2 tsps baking powder
2 tsp baking soda 1/2 tsps salt
1 cup sour cream 1 cup strong black coffee (try 3 tsps instant), This is coffee made up with water
1/2 oil 2 eggs
2 tsps vanilla

Mix all ingredients and bake for about 1 hours at 180 degrees.  This makes quite a big cake and is nice and moist. Ice with your favourite icing.  YUM.
